Corn Casserole

Full disclosure: corn is at the top of Mr K’s veggie preferences, but corn is nowhere to be found on our list of fun veggies to grow in the garden. We normally wait for a good sale at the grocery store, when five or six ears can be had for a dollar. We buy a bunch of ears, strip the kernels from them, place the corn in small portion bags and freeze. Then throughout the year we are able to pull bags from the freezer to enjoy. Yes, we know gardeners who enjoy growing their own corn, and if that’s you, awesome. However you end up getting ahold of some sweet, whole kernel corn, here’s a super simple and yummy corn casserole recipe that uses just a handful of ingredients. Recipe adapted from Paula Deen.
