A species that has naturally formed a unique characteristic (for instance from cabbage (Brassica oleracea) come kale (Brassica oleracea var. viridis) and kohlrabi (Brassica oleracea var. gongylodes); kale and kohlrabi have both adapted unique characteristics that differ from those of cabbage, so the variety (“var.”) portion of the name is added to the name of the species in order to call out the difference.
