A general term used to describe several vegetables in the mustard family (Brassicaceae, aka the crucifers or cabbage family), including broccoli, Brussels sprouts, cabbage, cauliflower, collards, kale, and kohlrabi. All cole crops are cultivated varieties of the species Brassica Oleracea.
